It is the result of a unique and unrepeatable graft, obtained from the experience and passion of the inhabitants of Lessinia, who over the centuries, have selected a particular variety of chestnut.
The marrone di San Mauro differs from the common chestnut for the enlarged shape, for the lighter colour, with well marked brown streaks, for the thin skin and the sweet pulp.
It is cultivated between the municipalities of Selva di Progno, San Mauro di Saline, Badia Calavena and Tregnago.
It is still harvested today with the old traditional methods: knocked down with long perches, put in heaps to “rissare” (macerate for 20 days in the hedgehog), selected and packaged, making it a genuine product.
