The product is excellent if eaten fresh, but it lends itself to various uses in the kitchen: soups, risotto, salads, side dishes, rolls, and much more.
Even today the “verza moretta” is a niche product, appreciated and much sought after, it is available in the area at restaurants and some retailers specializing in typical products, during the winter period.
Since the beginning, the cultivation of “verza moretta”, from the selection of the seed to the harvest, was done by hand involving the whole family.
Seed selection begins with harvesting, we proceed to the selection of the plants identifying the tufts that have the most marked characteristics in order to maintain as much as possible the hardiness of the product. Selected plants are transplanted close to each other so that, during the flowering period, the pollen is easily carried by wind and insects from one plant to another.
